STEAK AND CHIPS WITH
WINTER SPICED PEPPERCORN SAUCE
INGREDIENTS
2 x steak (whichever cut takes your fancy!)
FOR THE CHIPS
Potatoes
1 tbsp vegetable oil
2 tsp Goose fat
FOR THE SPICED
PEPPERCORN SAUCE
3 tbsps whole peppercorns
60g butter
100ml beef stock
60ml double cream
100ml Brandy
Small handful whole cloves
½ tsp grated Nutmeg
METHOD
Mix double cream, brandy, stock and spices into a small pan,
and gently heat.
Slice up potatoes into small wedges, add oil, fat and
seasoning and mix well.
Roast at 200 for about 30 minutes until golden brown.
While the potatoes are cooking, cook your steaks (2.5
minutes each side for rate, 3 for medium) and allow to rest for at least five
minutes before serving.
